Coriander powder - 1 tbsp. Garam masala - 1 tsp. Cumin Seeds - 2 tsp. Mango powder - 1 tsp. Lemon juice - 2 tsp. Salt - to taste. Oil - 1 tbsp. Wash and partially split the eggplants into four parts while keeping the top intact like forming a cross. Now apply this mixture on the insides of the partially split eggplant.
