Ris ala Mande with homemade Cherry Sauce. December 23, 2014. I’m back in Denmark for Christmas this year. For the first time in 5 years, I’m spending Christmas with MY family, and I can’t wait! Obviously the big thing about Christmas is food, and for me as a food photographer, no less! We’ll have all the regulars: Roast duck, pork roast with crackling, caramelised potatoes, gravy, herring and lots of snaps of course! And a classic Danish Christmas dessert, the Ris ala Mande of course! 1 litre whole milk.

I’ve shot a beautiful berry story, using ripe berries of the summer season. With Christmas fast approaching, I thought it would be a good idea to share this lovely take on the classic Pavlova with fresh berries, along with a Raspberry Vinegar recipe to use with the Pavlova. I cooked this recipe on TVNZ Channel 1, Good Morning earlier this year. Recently I spent a day with photographer Manja Wachsmuth. And cooked it again. I used shallots instead of onions to compliment the leeks and the result was an even better smoother delicately flavoured soup. Enjoy xx.
