Making fish stock - like chicken and beef - is very simple and easy. Although the other stocks take a long time to cook, it’s better not to simmer the fish stock for too long as the flavour becomes bitter. The dish I chose to post here was our starter. He told me that he had it at Gabrielle Hamilton’s restaurant in New York years ago and, since then, he added his own touch. Bash it well and then add the tamari sauce. Put it on the fish. And let them marinade in the fridge for at least 1 hour. Take the fish out of the marinade mix and brush it with maple. Put them under a hot grill for 10 minutes. My Asian grilled Salmon. It's sticky and juicy! Asian flavoured grilled salmon. 3 tbsp maple syrup.
