This was my dinner tonight and when I say it was good…it was good! 2 cans of black beans (rinsed and drained). 1 medium sized bell pepper (I used orange). 1 tbsp of olive oil. 4-6 medium sized potatoes (I’m not sure what kind I used, I really want to call them new potatoes the ones that don’t have the brown skin). 1 clove garlic (minced). 4 tortillas cut into strips (or packed tortilla strips).
