Monday, April 25, 2011. Monday, April 25, 2011. Dear Friends and Family,. I’m in South Jordan, Utah. Today is my nephew, Caleb’s, 32. Birthday and my grand-nephew, Dominic’s 19. Last Monday afternoon I made a large (18x13) cherry cheesecake and a double Ritz Cheese Ball for Empty Nester’s FHE. Then it was time to start cleaning. I did the kitchen/dining room, the family room, three of the bathrooms and all the dusting. Bob did all the tile floors and vacuumed the carpets and cleaned the fish aquarium.

Pumpkin Chocolate Chip Muffins. 1 C oil (I substitute in 1/2 C applesauce and 1/2 C oil). 1 1/2 C pumpkin. Mix together and add:. 3 1/2 C Flour. 1 tsp baking powder. 2 tsp baking soda. 1 1/2 tsp salt. 1 tsp cloves (yes, this sounds like a lot, but it makes the muffins tasty). 1-2 C chocolate chips. 1 Cup Butter, softened.

Friday, March 4, 2011. 1 1/2 Cup Powdered Sugar. 1/2 tsp almond extract. 2 1/2 Cups Flour. 1 tsp baking soda. 1 tsp cream of tarter. Mix chill for a few hours. cut out into shapes. bake at 375 degrees for 8 minutes. Really watch the time or you will have hard, crunchy cookies. And for the yummy icing, click here. Monday, June 27, 2011. Monday, June 27, 2011. Dear Friends and Family,. Last Monday morning I got the kitchen all cleaned. Later Greg Melven came over to visit Bob, but he wasn’t home so I visited with him until Bob got home around 2:30. In the meantime, I did a lot of watering outside to help keep the plants alive. The grass is all burning up where we don’t have a sprinkler system. I don’t remember in the 29 years that we’ve lived in Texas, as hot a June as we’ve had this year. Everyone got plenty to eat.

This meat is great for pulled pork BBQ sandwiches. It also taste great on baked potatoes and I like it cold on salads. It freezes great so I buy a big chunk of Boston Butt pork roast when they go on sale for under $1 and get lots of meals out of it. 1 Boston butt or pork shoulder roast. 1 large onion, quartered and sliced.
