I had boiled up some stock the day before so made a quick version of rizzi e bisi, or rice and peas. But I used orzo pasta. Orzo and Pea Soup. Chicken or vegetable stock, 1 to 3 litres (you can add as much as you like, depending on how soupy you would like your meal). Orzo pasta, about 150 grams per person, but I used 500 grams for 4.

First wintery day in Sydney. April 20, 2015. Today is the first rainy wintery day in Sydney. To warm everyone up I have made a big pot of soup. Whenever we have a roast, or lots of vegetable peelings. I like to boil up the bones and make stock. I then keep the stock in the freezer, ready to be used for soups or risottos. After Greek Easter and the lamb roast I made, I kept the residual juices and bits of meat, and froze them. I like to give the stock a good boil, after defrosting. Easy no knead bread.
