A Swede in London. A little bit of everything. St James’s Park. August 3, 2015. August 3, 2015. St James’s Park is very colorful at the moment! But the big attraction at St. James’s Park are the pelicans. The pelicans have been at the park for a very long time. Click here for more info on the pelicans. This post is also tying in with The Daily Posts Weekly photo challenge, which was inspiration. This is what inspires me, nature and all the wonderful things surrounding it. Very mischeavous little creatures.

A Swede in London. A little bit of everything. August 21, 2015. Gooey chocolate cake served with whip cream and berries. If you have ever been to Sweden you must have heard of kladdkaka. And if you haven’t, well then you better keep reading. Sweden is known for its Fika, when you meet up with friends and go to a café for a cup of tea/coffe and something to eat. And kladdkaka-a gooey chocolate cake-is the most popular. I made a kladdkaka yesterday and thought I would share it with you all. 3/4 cup of sugar.

A Swede in London. A little bit of everything. Roasted butternut squash soup. May 2, 2016. May 3, 2016. All the veggies are roasted together to give them a richer taste. 1 small butternut squash , about 700-800g. 1-2 caarrots (I am not a huge fan of carrots in soups so I only used 1 in my recipe). 1 clove of garlic. A few rosemary springs. About 900ml of vegetable stock. Depending on how thick you want your soup you may want to add more or less of the stock). A chunk of ginger. Put oven on 200c/180c fan.
