Cooking for those on the go. Monday, May 7, 2012. Quick and Easy Vegetable Soup. This recipe was inspired by this one. From Giada de Laurentis. I doubled it, skipped the crushed red pepper, the beans, and added a lot of vegetables. I made a double batch and froze some of it. I know it is summer, but this is such a quick and easy meal to take to work and if your office is anything like mine, it is frigid in the summer! Feel free to add your own veggies- even frozen ones! 1-2 Tbs of EVOO. 1 onion, diced.

It could have been a problem in the way that it was stored or the producers just might have gotten a bad batch, but knowing about this problem makes me really nervous to go buy 3 liters of olive oil that is imported from Europe. Cooking for those on the go. Sunday, October 13, 2013. Meal Planning Week #3. That is actually my big gripe with emeals, sometimes it works great, but other times it just does not. Monday- walleye, wild rice and a green salad (wild rice was made in a large batch and frozen prior to this week). Tuesday- crock pot chicken cacciatore. Wednesday- crock pot pork stew. Served in lettuce wraps with cauliflower rice (will prepare cauliflower in food processor prior to wednesday). Hope everyone has a great week!

Tuesday, May 14, 2013. Tuesday May 13, 2013 Ice Out Conditions. What a difference a few hours make. The first picture is Tuesday morning at 6:00 AM. The second is 4:30 PM. We started out with sunny cool weather. It turned to rainy, cold, and windy, then sunny and 65 in mid afternoon. The next pictures are out on the lake, I was test driving our rental fishing boats. Friday, March 22, 2013. The first day of spring was Wednesday March 20. As I look out over our bay there is absolutely no sign of that thing called spring, last year at this time it was 80 degrees and we were getting our fishing boats ready for an early, early spring. Not this year. I believe ice out will be around May 7. Is not late more in line with normal ice out over the past 50 years. Consider Rainy Lake and it’s surroundings renewed. Wednesday, June 13, 2012. Kettle Falls Tales From Our Past. I started guiding at my grandfather's Kettle Falls Hotel when I was nine years old. Our family started going up every weekend when I was even younger to help my mother's parents Charlie and Blanche Williams. Opening the hotel each spring was a highly anticipated event. Residents of the Little Fork Care Center started arriving about 10:30 AM This morning for their annual Rainy Lake Houseboat cruise and barbecue. Last year there was inclement stormy weather and the cruise had to be cancelled. Not this year, it is a glorious day, mid seventies, no wind and practically not a cloud in the sky. Cooking for those on the go. Thursday, April 17, 2014. Weeknight Dinner: Chicken Thighs. They were very flavorful although I think I would prefer more mustard next time. I cooked a mixture of potatoes, onions, carrots and celery underneath in the sauce, which made for an easy side. We also had broccoli bagna cauda.
