Adventures in good eating — recipes and food writing by Margaret “Meps” Schulte. Many years ago, my mother clipped an article from Southern Living with a full menu telling what to serve at a properly modern Southern wedding. I salivated over the photos of elegant cheese wheels and towering cakes, but the recipe that caught my attention was the mosaic potatoes. In the magazine photo, they looked like little jewels, with thin flaps of translucent potato allowing green herbs to show through. Red Beans and R...

About five years ago, I wrote an article entitled, “ No More Fridge-Free Living. 8221; about how we decided to stop buying expensive ice for our icebox and put a cheap dorm fridge in the cockpit of Flutterby. Adventures in good eating — recipes and food writing by Margaret “Meps” Schulte. Quick marinated asparagus and red peppers. For the final launch of the Space Shuttle Discovery, we drove up to Titusville from Vero Beach in the morning and hung out on the waterfront until the actual launch at 4:53 pm. It’s a good thing that we brought mostly healthy snacks, like veggies and dip and strawberries, instead of chips. That’s because most of what we did all day was people-watch and munch! 1 lb fresh asparagus.

Adventures in good eating — recipes and food writing by Margaret “Meps” Schulte. Cheap eats around Beaufort, North Carolina. Last December, Barry and I caught a ride from Beaufort, North Carolina, to Raleigh with Dan Smith, of Funny Farm. It was a miserable evening, raining cats and dogs, and we bounced along 2-lane roads in Dan’s Big Red Truck, swapping tales and keeping each other entertained. My problem with the hush puppies goes back to childhood, when I learned to associate them with seafood. As...
