Prep time: 15 min. bake time: 35-45 min. 2 tbls olive oil. 2 leeks, white part only, sliced. 2 cloves garlic, finely diced. 1 green bell pepper, diced. 1 red bell pepper, diced. 3/4 cup rice milk (or low-fat milk). 1 cup cooked quinoa (follow package instructions). 1 1/2 cups grated cheddar cheese. 1 pound small potatoes (such as Peruvian, gold, or red), unpeeled, diced and steamed. Salt and pepper to taste. 1 tsp thyme leaves.
