Meet Me At Mikes : Recipes. May 10, 2011. Tessa Kiros Tomato Lasagna. My version of Tessa Kiros' Tomato Lasagna. 125 kg of tinned diced tomatoes. 3 cloves of garlic, crushed. A good slosh of olive oil. One cup of warm water of stock. Bunch of fresh basil or a teaspoon full of dried Italian herbs. 8 sheets of instant lasagna (the dried one) : I used one family sized packet : about 350g. 1 litre of warmed milk. 3/4 cup of plain flour. Make the Tomato Sauce First. Make the Bechamel Sauce Next. Eat it all up!

A slosh of oil. 1 sweet potato, peeled and thinly sliced. 1 onion, finely diced. 1 clove of garlic, finely diced. 1 tablespoon of curry powder : I use this. A slosh of soy. 1 tsp of white pepper. 1 cup or so of coconut milk. 1 cup of chicken stock (or vegetable stock). 1 packet of noodles : around 250g (the fresh, thickish yellow ones) : soaked in boiling water for a few minutes. 1 handful of sliced fried tofu. My favourite thing about this dish is the fact that it has cous cous in it - only because whenever I use cous cous I have an excuse to say "cous cous, so nice they named it twice". I have no idea where I heard this but it is one of my favourite food related sayings, it is right up there with "lentil as anything". 1/2 chorizo, cut into small pieces. 1/2 small brown onion, diced. 1/4 teaspoon of paprika.

The Owl in the Kitchen. Tuesday, June 8, 2010. One for the Fins. At least, this is what the fella told me. "You should try real Finnish bread," he informed me, "but this is pretty good". Makes a solid loaf. 225 g rye flour. 300 g white flour. 7 g dried yeast. 1 tbs dark brown sugar. 2 good pinches of salt. 300 ml warm water. 1 tbs melted butter. Pre-heat oven to 190* c. Line a baking tray with paper. Bake in your heated oven for 45 or so minutes, until cooked through. Leave to cool and eat with joy.

Friday, 30 May 2014. Date Night with Vivid. We enjoyed another "just us before the baby" date night this week. It's the annual Vivid Festival. Again and something we like to check out every year. This year we decided to have dinner first and chose to eat at O Bar and Dining which is a revolving roof top restaurant which of course gives you a 360 degree view of the city. Perfect when the city is all lit up with light displays! I guess next year we tackle the crowds with a stroller! Links to this post.

Recipes, mainly cake, and a few tips on cooking. The batter produced pancakes that looked and tasted a lot like my usual ones. The main difference was that they seemed to take a lot longer to cook (maybe twice as long) – probably because there were no milk proteins to brown. As always, the best filling was Mum’s rhubarb and ginger jam. Maybe next time I’ll experiment with egg substitute…. Vegan Indian Palak “Paneer” (Spinach and Tofu). 2 tbsp olive oil 1 tbsp. 3 cloves garlic, minced. 3 tbsp curry powder.
