Recipe by Julie Montagu. 50g dried red split lentils. 1/2 vegetable stock cube (celery). Handful of fresh parsley. Finely dice the onion and red pepper. Finely chop or crush the garlic and peel and finely chop the ginger. Roughly chop the parsley leaves. Meanwhile, boil a kettle and dissolve the vegetable stock cube in 300ml water. Rinse the quinoa and red lentils in cold water.

Recipe by Julie Montagu. 170g firm tofu (soya). 2 tbsps tamari (soya). 1/2 tsp chilli flakes. Preheat the oven to 220C. Drain and rinse the tofu and cut into 2 cm cubes. Peel and finely chop the ginger and roughly chop or crush the peanuts. Place the carrot and courgette onto a baking tray, sprinkle with 1 tsp oil and place into the oven for 15 mins.
