Roasted Sweet Potato and Black Bean Quesadillas. 1 medium onion, sliced. 1 cucumber, peeled and sliced. 4 large garden fresh tomatoes, peeled and coarsely chopped. 1 green pepper, sliced. 2 cups tomato juice. 1/8 teaspoon cayenne pepper. 1/2 cup wine vinegar. 1/4 cup olive oil. 1 tablespoon Worcestershire sauce. 1 Put all ingredients in a food processor and blend well. Growing leaps and bounds and he has almost caught up with his big cousin. He loved playing with other children at summer camp so much that we decided he should return for preschool.
