Miscellaneous cut and paste. Sunday, March 14, 2010. Minestrone Soup (Erin's version). Note from pianomom: I made this on top of the stove and let it simmer for an hour. Everyone loved it. I didn't have rind from a Parmesan, but it was still wonderful. 189; a finely chopped onion. 1 cup finely chopped celery. 6 finely chopped “baby” carrots. 2 tbs olive oil. For sautéing and 1 tbs olive oil added to the crock pot. 1 red potato finely chopped (optional). 1 cup cooked cannellini beans. Or other white beans).
