Rice and Beans with Avocado. 1 cup long-grain brown rice. 1 (15-ounce) can black beans, rinsed and drained. 2 cups halved cherry tomatoes. 2/3 cup diced peeled avocado (about 1 medium). 1/3 cup chopped green onions. 1/3 cup (1 1/2 ounces) shredded cheddar cheese. 1 tablespoon chopped ripe olives. I had that for lunch!

From the recipe archive, in honor of St. Pat’s. The acid in buttermilk reacts with the base of the baking soda to provide the leavening for this quick bread. Soda bread dries out quickly so is only good for a day or two. It is best eaten freshly baked and warm or toasted. 1 teaspoon baking soda. 1 egg, lightly beaten.

At the end of the game, when scoring, if you have one of each of the 6 categories (corn, swords, hat, coin, sitar, and vase), you add up one from each category and double your score.
