Cy requested to make gingerbread men, and though I had all the ingredients on hand to make sugar cookies, he was adamant that he did NOT want to make sugar cookie gingerbread men, but real gingerbread men. So I found a gingerbread cookie recipe online that called for Jell-O butterscotch pudding instead of molasses. I really loved how they turned out. Mild and soft, but firm enough for decorating.
