Dit is geen Umbrisch recept, het is Toscaans, maar voor iets goeds is het nooit te laat. 500 gr. kastanjemeel. 750 ml. water. 40 gram rozijnen, geweekt een zorgvuldig afgedroogd. 80 gram walnoten, grof gehakt. 1 takje verse rozemarijn. Verwarm de oven voor op 200°C. Meng het meel met het water tot het een gladde pasta is. Leg wat van de rozijnen, walnoten en pijnboompitten apart om later de taart me te bedekken.
