At Mount Eliza Cheese, we make our cheeses in small batches from rich, fresh full-cream farmhouse milk from happy grass-fed cows. We use traditional recipes and methods that date back centuries. Each batch is made in an open vat where the cheesemaker draws upon all his skill and experience rather than industrial processes. The emphasis is very much ‘hands-on’ so that the cheesemaker can tweak and adjust according to the seasonality of the milk and the peculiarities of the curd on the day. No whey, José.

Mount Eliza Cheeses are handmade, drawing upon the cheesemaker's skill and experience rather than industrial processes. Our cheeses are cloth-bound, then turned and brushed weekly, allowing the natural surface moulds to develop and to promote a healthy natural rind (without the use of plastic or wax). In June the New Zealand Herald published an article on the Tauranga Farmers Market.:. Cheesemaker Chris Walley has been handmaking cheeses since 2007: he's from Cheshire, so naturally that savoury beauty is a goody, but the deep red Leicester is smooth, sweet and nutty and the Eliza blue has a stilton-like pong. The full article is here. The annual New Zealand Cuisine Champion of Cheese Awards. A gold medal was awarded to our Red Leicester. Don't mistake ours for simple coloured cheddar or smoked cheese!
