Monday, October 24, 2011. What We Did in July, Part II. Brooks is 8 months old here. He had not been interested in crawling, so we were pretty excited when he started pushing up. We went to cousin Dea's wedding in Jackson! Delia loves all things princess and fairy tale. She was mesmerized by the princess aspect of the wedding and wanted to pose with "the princess" afterward. During the ceremony, she whispered "When is she going to turn into a princess? Brooks and his Pappaw! Then on to the playground!

Over the Easter weekend, my mom gave me a container of Beet Green and Horseradish Chimichurri that she had leftover from a Lenten meal she had prepared. I decided to add the chimichurri to tuna in the hopes of a new tuna salad creation.the result was incredible! 1/4 cup plain greek yogurt. 1 tbsp dijon mustard. 2 tbsp beet green and horseradish chimichurri (see recipe below). 1 5 oz can of tuna. 1 cup cucumber, diced.
