A Bowl Of Red. An Awkard Moment in H. Rider Haggard’s. My Own Bowl of Red. Here is my own variation on Tolbert’s bowl of red. Not my favorite chili, mind you, but worth eating every once in a while to remind yourself of chili’s long and rich history. 1/8 lb of beef suet. 3 lbs beef chuck roast, cut into quarter inch cubes, dredged in 2 tbsp masa harena and 1 tbsp of salt. 2 small cooking onions 4 cloves garlic. 2 tbsp ground cumin. 1 tbsp cayenne pepper. 1 tbsp brown sugar (or more).
