CARROT AND CORIANDER SOUP. 1 tsp ground coriander (seeds). 1 handful fresh coriander (leaves). 1 Peel and chop the onion and soften in a little oil. 2 Grate or dice the carrots. Dice the potato. Add to the onion, together with the ground coriander. The addition of the potato thickens the soup.
