We called my grandma Iya Abeokuta (Mother of Abeokuta), and I have named my recipe after her:. Ewa Iya Abeokuta aka Iya Abeokuta’s beans. This serves about 10 people, but I like to cook more than enough so I can freeze some seeing as its not exactly a quick recipe). 2 large onions – chopped. 2 large red bell peppers. 1 x 400g tin plum tomatoes. 1/4 cup palm oil.

Pistachio Frozen Yogurt – The Wild Card. Here is the last of my trio of frozen yogurt flavours – Pistachio. Yes! If it’s good enough for ice cream, then it’s good enough for my frozen yogurt. Don’t knock it till you’ve tried it…. 500g thick plain yogurt. 2 tsp muscovado sugar. 50g plain pistachio nuts without shells – ground. You can use a blender if you’ve got one or a pestle and mortar like I did, if you don’t. Failing that, out them into a freezer bag and bash with a heavy item :-). And The Fruity One.

Kelewele is a Ghanian snack made of ripe plantains seasoned with ginger and other spices. I heard about it the first time a few weeks ago from a colleague at work after she caught me taking pictures of my lunch. Having explaining to her that me taking pictures wasn’t a weird habit and that I had a blog, we got talking and she told me about Kelewele. So I modified the recipes slightly and came up with this. Kelewele with a kick:. 2 large plantains – ‘just ripe’ (i.e. yellow but firm). 1/2 tsp chilli flakes.
