Plus this chutney goes with pretty much anything, chapathi, rice, idli or upma. Also you don't have to throw away those cauliflower stems, which is always more than the cauliflower itself. I recently saw a cup of boiled black-eyed peas in the refrigerator and thought maybe I could make some kind of rice with it and what followed was this creation which was absolutely tasty. Rice - 1 Cup Cooked. Black eyed peas - 1/2 cup cooked. Onion - 1, chopped. Carrot - 1 medium, peeled and chopped. Fresh Coconut - 2 tbsp. Lime juice - 1 tbsp. Mustard Seeds - 1 tsp. Jeera Seed - 1 tsp. Turmeric - 1/2 tsp. Salt - to taste.

I had grilled the sandwiches like they do with the paninis, and so you can use any kind of bread you like to get the effect. If you dont have the grill you can use a non-stick pan to grill the veggies, u just dont get those grill effect, but the taste would be the same. Japanese Eggplant - 1 sliced into long diagonal pieces. Zuchini - 1, sliced diagonally. Tomato - 1 large, sliced into thin rounds. Lettuce - few leaves.

Onion - 1, finely chopped. Tamarind - 1 lime size, soaked in warm water. Mustard seeds - 1tsp. Cumin powder(jeera powder) - 1 tsp. Green Chillies - 2 Slit lengthwise. Red chilli powder - 1/2 tsp. Turmeric powder - 1/4 tsp. Coriander Powder(Dhaniya powder) - 1/2 tsp. Fresh or dry coconut - 1 tbsp for garnishing.

This is a very quick and tasty chutney, goes very well with rotis. Onion(red or yellow) - 1 large, diced. Peanuts - 1/4 cup, roasted. Tamarind pulp - 1 tbsp. Chilli powder - 1 tbsp or to taste.
