My EcoChallenge: Eating Local. Wednesday, October 7, 2009. Days 5 and 6. It will be pretty easy to do these two days together, because we ate pretty much the same things both days:. Lunch- smorgasbord of things including a hard boiled egg, cheese, hazelnuts, apple, pear, and some leftovers- Monday it was leftover chicken, Tuesday leftover fried green tomatoes. My EcoChallenge: Eating Local. Wednesday, October 14, 2009. Breakfast- bacon and eggs (from 4 miles away- thanks Sarah and Patrick! Lunch- Veggie stew, leftover salmon, dried plums, apple. Snack- Roasted Hazelnuts and cheese. Dinner- tons of beets, sautéed Italian peppers and onions, potatoes. Lunch- leftovers from last night, an apple, more cheese, and a corn meal muffin with honey. My EcoChallenge: Eating Local. Tuesday, October 13, 2009. Here's what we've been eating lately:. Dried apples (thank you Sarah and Patrick! Pumpkin seeds, roasted. Dried plums, otherwise known as prunes I suppose. Salmon (our best local meal yet! Thanks Kelly and Ross! Veggie stew, this one's not as good as the last, and I made more. oops. My EcoChallenge: Eating Local. Sunday, October 4, 2009. Breakfast- garden and CSA potatoes, roasted, and fried eggs atop them. No ketchup- looked into homemade ketchup but it seems to take forever, and I'm busy dehydrating every tomato in the house. Lunch- leftover chicken and veggies from last night, hazelnuts.
