Spelt and Chocolate Zucchini Loaf. 2 cups spelt flour. 1 teaspoon baking powder. 1 teaspoon baking soda. 1/3 cup plain greek yogurt. 1/4 cup oil (heated coconut or vegetable oil of your choice). 2 cups shredded zucchini. Preheat oven to 350 degrees Fahrenheit. In a large bowl combine flour, cocoa, cinnamon, baking powder, baking soda and salt. Mix until combined. Bake for 45-50 minutes or until a toothpick comes out clear. 1/4 lemon, juiced.

To be honest, I can't even remember what we used to eat before it made it's way into my kitchen. It is so simple to prepare, nutritious and tastes great! I have recently started using black quinoa, it tastes the same as the white or red varieties, but I like the colour. I love pairing warm quinoa with cold, fresh veggies or legumes. Yum! 1 cup quinoa, cooked and cooled.

They are as good hot as cold, on their own or in a salad. Give them a try.
