Susan's Recipe Box. Adapted (lightened up) from the Lion House Bakery cookbook. 4 c grated zucchini squash. 1 medium gala apple, cored and grated (unpeeled). 2 c egg beaters (equivalent to 6 eggs with some yolks removed). 1 1/2 c. sugar. 1 c vegetable oil. 1 c applesauce, unsweetened. 1 tsp baking powder. 2 tsp baking soda. 6 c bread flour. 2 c finely chopped walnuts. 1 tsp dried lemon zest or orange zest (optional).
