My girls ate this up. 3 cups all-purpose flour. 1 teaspoon baking soda. 1 teaspoon baking powder. 3 teaspoons ground cinnamon. 1 cup vegetable oil. 2 1/4 cups white sugar. 3 teaspoons vanilla extract. 2 cups grated zucchini. 1 cup chopped walnuts. It's a good way to get your vegetable servings in for the day (which is what I really need! We loved this pasta. I will be making it again soon! It's been a a while (cough, cough, cough), but here's a great one! 6 C Old fashioned oats. 1/2 C wheat germ (I could not find this. I omitted it.). 1/2 C Sunflower seeds. 2 C Flake cereal (Total cereal works great). 1 C Unsweetened coconut (I could only find sweetened. It worked fine.). 8 T Coconut oil or butter (I used coconut oil).

The best way I would describe it is an Indian inspired mild rice dish, South Indian due to the use of curry leaves 🙂. This is great eaten alone or as a more substantial side dish.
