I make these as a quick lunch during super busy days! 1/2 mango, seeded and diced. 1 roma tomato, seeded and diced. 1 stalk scallions, chopped. 1 lime, juiced. 3 Tbsps raspberry vinegar. Optional: 1 cup crab, cooked and shredded. 3 ozs Monterey jack cheese, shredded. 1 avocado, diced. 1/4 cup scallions, chopped. 3 Tbsps sweet corn.
