2 T olive oil. 1/2 cup finely chopped onion. 1 can of diced green chilis. Taco seasoning, salt and pepper. 2 cups of cooked shredded chicken. 1 can of black beans, rinsed well. 10 large tortilla shells. 1 can of enchilada sauce. 1 cup shredded mozerella cheese. 1 Sauté the oil with the onion on medium heat in a large frying pan. Add seasonings and diced green chilies. Cover and simmer on very low heat for about 15 minutes. Serve hot, with Mexican rice and a cool crisp salad. Yummy! 1 small onion, diced.
