Thursday, May 20, 2010. 2 C Mango Peach Salsa (I got mine from Costco). 1 can chili beans. Place in crockpot for 5hrs if breasts are frozen. Shred chicken. Serve with cottage cheese, and cheddar cheese on top. Eat with tortilla chips. Ps This is Mindy's recipe. I just made it for our freezer meal group ,a nd I tried to post it to there. Tuesday, March 23, 2010. Cafe Rio Salad Recipes. CAFE RIO CREAMY TOMATILLO DRESSING. 1 chopped and seeded jalapeno pepper. 3-4 tomatillos, chopped. Approx 1/2 cup chopped cilantro. 1 clove minced garlic. 1 pkg buttermilk ranch salad dressing. 1 tsp lime juice. Blend all together in blender; chill. The longer it chills, the thicker it will be. 2 c white rice. 4 chicken bouillon cubes. 2 cloves garlic, minced. 6 green onions, chopped. 6 sprigs cilantro, chopped. CAFE RIO SWEET PORK. 1 tbsp. cumin.

Sunday, December 25, 2011. A Few Happenings Lately. I just love this picture of Will :). My ornament I got from Sen. Hatch. I'm pretty proud of that thing. My singles ward put on a live nativity and they did such a great job. It was in a barn and they had all the live animals for it, even a camel, and we sat on hay bails for seating. It was the perfect thing to get in the Christmas spirit. Em and I went and saw the lights on temple square with Jesse and his brother Matt. I always love going there.

Tuesday, March 23, 2010. 1/4 cup lime juice (about 2 large limes). 2 teaspoons to 1 Tablespoon chili powder. 2 large cloves of garlic, finely minced or 1/2 teaspoon garlic powder. 1 lb boneless skinless chicken breasts (about 2 large breasts), cooked and shredded. 2 cups of Mexican cheese blend, shredded (1 small bag usually is 2 cups). 1 14-oz can of green enchilada sauce (mild or medium, to your taste). 1/2 to 3/4 cup of heavy cream. 1 Tablespoon of chopped cilantro, to garnish.
