Teacher. Mom. Crazy Lady. Sunday, August 25, 2013. Back on the Menu Planning Train. Meatless Monday: Tilapia Baked in Couscous. Tuesday: Beef Stir Fry with onions and string beans. The beef was already cooked and frozen in some kind of sauce (I forget what kind), so I'll just be cooking up the veggies and adding the defrosted beef. I'll be sure to set some of the beef (with the mystery sauce washed off) and string beans aside for Twin A, who does not like sauces or food that is mixed up. More I Love You.

Teacher. Mom. Crazy Lady. Who is This Teacher. Mom. Crazy Lady Anyway? I'm a teacher. Currently I'm teaching preschool. Before I had my kids I taught elementary school. I always knew I would be a teacher when I grew up. I'm a mom. Our twins took us five years and LOTS of fertility interventions to conceive, and our daughter is proof that the best things in life are not always planned. Basicially, I'm just a crazy lady trying to keep my sanity while juggling all the balls that are our life. More I Love You.

My cousin Katie recently asked my opinion about when she should start her seedlings inside, and I thought my response would make for a perfect blog post. I tried starting my seedlings inside one year and I found those plants didn't grow that much bigger or quicker than the seeds I just stuck in the ground. So for my money, and sanity, just wait for spring! Hopefully it will be here soon. Check out my website!
