納豆とは
製法や菌の改良などで匂いを少なくしたり、含まれる成分の内 ナットウキナーゼ の健康増進効果がテレビなどのメディアで伝えられるようになり、この40年間を見ても国内各地域での消費量の差 一番少ない近畿中国四国と福島水戸など一番多い地域との差 は大きく縮まっています。 これは1981年、関西での納豆消費拡大のため、関西納豆工業協同組合がなっ 7 とう 10 の語呂合わせで制定したものであり、1992年、全国納豆工業協同組合連合会が改めて 納豆の日 として制定されました。 納豆 という語句の、確認できる最古の書物は11世紀半ば頃に藤原明衡によって書かれた 新猿楽記 です。 この記述の読み下しには諸説あるが 舂塩辛 納豆 、 舂塩 辛納豆 、 大根舂 塩辛納豆 など 、 辛納豆 唐納豆 など、これは本来の意味の納豆、つまり現在の 塩辛納豆 を指すものであろうという意見が多い。 現在の主流の納豆、つまり糸引き納豆についてですが、 煮豆 と 藁 の菌 弥生時代の住居には藁が敷き詰められていました。
