By Dr John and Mary McDougall and can also be found on the Fork over Knives website. I've adapted it slightly and I also use a different Enchilada Sauce recipe than the original. Oh, and it is very important to cover while baking otherwise the enchiladas are a little dry. Yukon Gold potatoes, peeled and cut into small cubes. Whole wheat or corn tortillas. Enchilada sauce - recipe below.

I had some broccoli, tzatziki sauce (sort of), and half of a huge head of cauliflower that was the size of my head or bigger left over from trying to make cauliflower tabouli. (Note to self: next time take a photo of the huge cauliflower.). Yield: 4 - 6 servings. Raw cashews, soaked.

I mostly serve this over a baked potato and sometimes over brown rice. I've also served it open faced on whole grain buns, but I've never been able to pick it up and just eat it without making a big mess. The recipe calls for brown lentils, but I've used all colors: red, green, brown. I sometimes add corn for a little different taste. Hi, I'm Karen.
