Or I’ll at least achieve greater flexibility. Aside from being physically inflexible, I’m pretty inflexible mentally. When I got home, Jason told me that the rice cooker had never started, so our rice wasn’t ready. Plus, it was already 8 o’clock and I still had to make the Korma. October 26, 2010. I had the pleasure of attending Chicago VeganMania on October 9. It was an unseasonably hot fall day in the city, and the Pulaski Park Fieldhouse was not quite up to the task. That did not stop the droves of vegans that came out for the speakers, cooking demos, vegan vendors, and food. including yours truly. Steve and I arrived just in time for the cooking demo by Chicago Diner. Chef, Kim Gracen. On the menu: cheddar ale soup, yum! Next up was Fran Costigan's cooking demo. Love her!

There have been some teaser days spent mostly outdoors, along with a few healthy thunderstorms. However, I am not measuring the change of seasons by this criteria - the evidence that I seek is the vegetables! Spaghetti Squash with Green Pea Pesto and Beans. 1 large spaghetti squash (3-4 lbs). 1 15 oz can cannellini beans (or chickpeas), drained and rinsed. 1 tsp dried oregano.

In my late spring basket, I received a huge head of lettuce, a bunch each of beets and radishes, big bags of spinach and arugula, chives, garlic scapes, and kohlrabi. Motor City Girl in the Steel City. Finding health, happiness and wedded bliss in Pittsburgh. Smoky White Bean Chili. Vegan, gluten-free, low-fat). Grilled Banana Challah French Toast. 1 large slice of Challah (egg) bread, broken into two. 1 egg, beaten. 2 tsp brown sugar. 1 medium sized banana, sliced hot dog (long) way. Grease and heat griddle. Make basic French toast by dredging challah in eggs and placing on griddle. Sprinkle brown sugar on one side of each slice of bread. Gobble up the deliciousness!
