This is my favourite way to use the gluten-free starches and flours together for every day baking, especially heartier buns or fruity cakes. It has a mix of approximately equal parts starches and flours, with some added for fiber and others for flavour. Everything but the kitchen sink flour mix. 2 cups white rice flour. 2 cups brown rice flour.

The basics: home made mayonnaise. 1/2 tsp Dijon mustard. 2 tsps lemon juice. 1 Tbsp white wine vinegar. 1 cup oil, I usually use canola or olive oil ( please read note. Continue whisking until all of the oil is incorporated. If you add the oil too quickly and it splits don't throw it away! You can refrigerate home-made mayonnaise for up to 1 week. This recipe uses FIVE of them suckers! 1/2 c soft butter. 2 Tbsp coconut milk. 5 very ripe bananas (mashed). 2 c gluten free flour. 1 tsp baking powder. 1 tsp baking soda. 1/2 c chopped walnut. 1/2 c chocolate chips. Preheat oven to 350F. Line a large 11x17 cake pan with parchment paper, set aside. This is a filling cake! Give them my love.
