Food obsession, plain and simple. Laquo; how can i miss you if you never go away? I have not posted here in an embarrassing amount of time. Mortifying, really. 2 plus years, during which much has happened. Children have grown–there are no more babies in my house, just little boys. And my house is just that–an actual house. This recipe is slightly adapted from one that originally ran in Everyday Food. 2 cups basmati rice. 2 Tbsp olive oil. 1 onion, halved and thinly sliced. 4 garlic cloves, minced. 2 Tbsp minced peeled fresh ginger. Coarse salt and ground pepper. 1 Tbsp curry powder. 1 28 oz can peeled whole tomatoes. 8 hard-cooked eggs, peeled and quartered. 2 scallions, thinly sliced, for garnish. Tomato and Olive Salad.
