It is frequently found on Italian menus as well as the French table where it is called Loup du Mer. It is apparently popular in many other Mediterranean countries as well. Because I was concerned that I was a little shy on having a full meal for two people I made a little sesame seed seared tuna appetizer with sriracha mayo. Thursday, October 16, 2008. 6 to 8 medium red potatoes or 4 large russet. Clean, peel if you want, and chop them into 1 inch squares. Place in medium sauce pan and cover with 1 box Swanson chicken broth. Bring to a boil and cook till fork tender. It should still hold shape. Mash a little with a potato masher and add 2 cups milk. Grate 2 cups smoked Gouda (or any strong flavored cheese). Put 4 to 6 Tbsp of flour over the cheese and toss it together. Covering the cheese with the flour. Boys will be boys.
