Two ramen freaks spreading the love. Monday, August 3, 2015. 麺屋花形 Hanagata: star of the giants. Way out in the sticks of Kashiwa, with nary an ocean in sight, lies a big shop that specializes in fishy soup. Hanagata's signature bowl is a triple fish blend shoyu. Gyokai shoyu ramen (780yen). This is a bold bowl with thick, curly noodles that sop up the strong, smoky broth. Which tastes and looks like a grungier Taishoken. Seabura yasai ramen (850yen). Hanagata is another Chiba shop.

Two ramen freaks spreading the love. Tuesday, March 31, 2015. はやし Hayashi: tokyo heaven. This is, hands down, my favorite spot in Shibuya. Which makes it one of my favorite ever. Hayashi is a single counter run by a husband-wife team, open only for 4 lunch hours a day. Blend, in a beautiful golden hue. Some bowls taste too fishy, others too porky. Hayashi's bowl is refined, with the pork blended smoothly with the smoky dashi, and just a little bit of yuzu citrus on top for zest. Subscribe to: Posts (Atom).

A blend of fish and chicken stock mixed with fresh vegetables. The shop adds a secret recipe of shoyu sauces for additional impact. This was the most common bowl post-war, and is said to be a big inspiration for Momofuku Ando's Nisshin brand Chicken Ramen and Cup Noodles developed to cheaply satisfy Japanese appetites. Less a crowded ramen cafeteria than a quaint Italian cafe, the place is decked out in a rabbit decor, with lots of rabbit figurines littering the shelves and tables.
