Monday, April 11, 2011. I really don't have a good excuse to why I've been M.I.A. from my blog. I don't have anything exciting to report.I can't even say that I've been working long hours, because I haven't! But what I do know is that I'm back to blogging! This past weekend the weather was beautiful.So, Denis, my sister, by brother-in-law, Jack, Nacho, and I all took a walk along the boardwalk in the Beaches. Nacho enjoyed running in the water, while Jack had a blast through rocks into the water.

Wednesday, April 20, 2011. Bird's Nest Cookie Cupcakes! I saw this recipe to make Bird's Nest Cookies using butterscotch morsels, chow mein noodles and egg-shaped candies over at Tip Junkie. That I had to try for this Easter weekend. But of course I had to adapt the recipe to my liking. For example: instead of butterscotch I used milk chocolate and instead of leaving them as cookies I used them as toppers for my chocolate cupcakes! Makes 2 1/2 dozen cookies. 12 oz package chow mein noodles.

Monday, March 21, 2011. Full Moon Nacho's Birthday! On Sunday around 2 am Denis and I though it was a great idea to grab the camera and head on outside to take a few pictures of the full moon. The biggest in 18years! With the camera attached the the tripod, Denis slowed down the shutter speed and opened the aperture to capture the bright moon. Today Nacho turned 6 years old.
