I found this video posted in one of my communities today and thought about how relevant it would be for most of us here. I'm definitely going to try this soon! Peeled and cubed (2 pounds). Onion , chopped (1/2 cup). 3 cloves of garlic. Sour cream (use light if you're on a calorie-reduced diet). 1 Mix all ingredients except the sour cream in a 31/2 to 6 quart slow cooker. 6 For crunch and colour, sprinkle with poppy seeds or chopped pecans.

Roasted Red Pepper Hummus. 1 (15 ounce) can garbanzo beans, drained. 1/3 cup tahini or peanut butter. 1/3 cup lemon juice. 1/2 cup -3/4 cup (4-6 oz) roasted red peppers. 1/2 tsp ground cumin. 1/2 tsp cayenne pepper. 1/4 teaspoon dried basil. Splash of lime juice, garnish. 1 tablespoon chopped fresh parsley, garnish. Refrigerate for at least two hours. If you try this recipe let me know how you like it. 1 garlic clove, minced.

This recipe is an attempt to get more fish in our diet and maintain good health and not wreck havoc on our rushed schedule. 1 teaspoon olive oil. 1 sole fillet, about 4 to 6 ounces. Freshly ground black pepper. 2 tablespoons low-sodium chicken broth or fish stock. 2 teaspoons lemon juice. 2 teaspoons chopped parsley.
