CHICKEN and VEGGIE OMELET SUPREME. 1 egg plus 1 egg white beaten. 1 oz of cooked chicken or desired white meat. 1/2 cup chopped vegetables (green onions, green peppers, mushrooms ect.). 1/4 cup salsa or rotel (optional). 1 wedge laughing cow light cheese (flavored or regular). 1/8 tsp of light salt.
