Bonus points for super fun riding in Western Mass between races and super fun riding partner friend Justin (Wolverine: see blog right) who went crazy fast and furious to start in the 70s and finish in the 20s. Three Bean Beef Chili. Especially good when the weather gets colder, this chili is cheap and quick to make. The lean beef can be easily substituted with even leaner ground turkey or, for a vegetarian dish, forget the meat and add more veggies. Depending on your appetite, a batch should last you a few days, so you can bring it to class or work. 2 x 14.5 oz cans Diced Tomatoes. 1 can Tomato Paste. 1 can Chili Beans. 1 can Pinto Beans. 1 can Kidney Beans. 1 can Sweet Whole Kernel Corn. 1 Green Bell Pepper.
