50g Frozen Petit Pois. Large Handful of Baby Spinach Leaves. 100g Cucumber, watery centre removed and roughly diced. 2 Medium Cooked Beetroot, peeled and diced. Red Onion, finely chopped. 2 tbsp Pumpkin Seeds, toasted. 1 x 200g Jar Ocean Crown Cooked and Pickled Cockles, drained. Seeds from 1 large Pomegranate. For the Orange Dressing:. Grated Rind and Juice from 1 Large Orange. 2 tbsp Cider Vinegar. 2 tbsp Olive Oil. 2 tbsp Runny Honey. 1 Clove of Garlic, crushed. Salt and Freshly Ground Black Pepper.

Halloumi & Cockles with a Salad of Spelt, Chickpeas and Beets. 1 Red Onion, finely sliced. Salt and Freshly Ground Black Pepper. 3 tbsp Olive Oil. 400g Can Chickpeas, drained and rinsed. 2 x Cooked Beetroot, cut into slices. 1 x 200g Jar Ocean Crown Cooked and Pickled Cockles. Large handful of Flat Leaf Parsley, roughly chopped. 250g pack Halloumi Cheese, sliced. Squeeze the juice from the second lemon and use to make a dressing with the olive oil, capers and seasoning. Mix thoroughly and set aside.

Maple and Cranberry Salad with Cockles. 2 tbsp Maple Syrup. 2 tbsp Balsamic Vinegar. 1 bag Mixed Salad Leaves. Small Handful Pecan Nuts. 1 Medium Apple, sliced. 4 tbsp Dried Cranberries. 1 x 200g Jar Ocean Crown Cooked and Pickled Cockles. Whisk the dressing ingredients together. Combine the salad ingredients in a bowl and spoon over a little of the dressing. Store the remaining dressing in a jar.

Mussel and Mushroom Broth. 1 Small Leek, finely sliced. 50g Shitake Mushrooms, chopped. Salt and Freshly Ground Black Pepper. 1 x 200g Jar Ocean Crown Cooked and Pickled Mussels. Fresh Dill, to garnish. Melt the butter in a saucepan and sauté the leeks over a medium heat for 3-4 minutes without browning. Add the mushrooms and cook for a further 2 minutes, stirring from time to time. Meanwhile, make the stock by mixing the anchovy sauce into the boiling water. Add the drained Mussels. Season to taste.

Cockle, Courgette & Pesto Pasta. 2 tbsp Olive Oil. 1 Small Onion, finely chopped. 1 x 190g Jar Green Pesto. 2 x 200g Jars Ocean Crown Cooked and Pickled Cockles, drained. Cook the pasta according the the pack instructions. Meanwhile, coarsely grate the courgettes and set aside. Heat the oil in a pan and cook the onion over a medium heat until softened. Add the courgettes and fry together for 2-3 minutes until soft. Drain the pasta and return to the pan. Add the courgettes, onions, cockles and pesto.
