יום חמישי, 4 ביולי 2013. אוממי, הטעם החמישי (ומתכון אוממי במיוחד). כשאני גדלתי לא היה אוממי (בעצם, היה. אני פשוט לא הכרתי אותו). היה חמוץ, מתוק, מלוח ומר. רק כשהגעתי ללימודי הטבחות השף שי הסביר לי על האוממי, ונגנבתי. גילוי של טעם חדש. קוראים לו, ביפנית, "טעים". עבור חוש הטעם הרצפטורים הם תאים המכונים תאי הטעם. אלו מצויים במבנים שמכילים 50-100 תאי טעם, ונקראים "פקעיות טעם" (Taste buds). פקעיות הטעם מצויות בכל חלל הפה- בחיך, בגרון, בלוע ואפילו בשליש העליון של הוושט. בלשון הן מאורגנות במבנים שנק...ההערכה הר...
