Just another WordPress.com site. Day 2 on Engine 2! Breakfast Burritos w/ Tofu Scramble and Collard Greens. I was excited to finally be eating Tex- Mex in Texas! Well not really but it was just the fix. The Breakfast burritos were served with vegetables that were not cooked in oil, a tofu scramble which was basically ground up tofu with cumin and other spices. Just another WordPress.com site. Day 3 of Engine 2! Day 3 at the Engine 2 Immersion began with another exciting workout with Nat Turner. The workout was great as it combined a few things I learned on the first day, with a couple of new one’s. That was followed again by breakfast. Rip’s Big Bowl and Kale w/Cashew Sauce and Fresh Fruit. In case you are wondering what goes into Rip’s Big Bowl it is:. 1/4 cup raw old-fashioned oats. 1/4 cup Grape Nuts or Exekiel brand equivalent. 1/4 cup Uncle Sam Cereal.
