Neil Banks grew up in and around the Newcastle area, situated in the north western region of Staffordshire. He spent many years as an engineer, beginning as an apprentice and working his way up to be director of a prosperous local company. Neil has always been interested in poetry and songwriting and has collaborated with a number of musicians over the years to produce a substantial catalogue of songs, many of which have appeared on CDs and compilation albums. Is one of such works.

Several years ago Neil Banks was asked by a local amateur dramatics society to write a pantomime with a local theme. Being born and bred in North Staffordshire, he decided that nothing epitomised the area more than the traditional North Staffs Oatcake. Having always maintained a keen interest in poetry, he set about writing a long poem as the narration to the story of an Oatcake who, like the Gingerbread Man before him, comes to life and embarks on a wild adventure. To make a dozen Oatcakes:. 8 oz (225g) fine ground oatmeal. 4 oz (100g) wholemeal flour. 4 oz (100g) plain flour. Oz (15g) fresh yeast or 1 tbsp dried yeast. Pint (450ml) lukewarm water. Pint (450ml) lukewarm milk. With a wooden spoon, work the yeast into pint (150ml) of the milk. Add the sugar to the yeast mixture.
