January 15, 2011. Potato and Pepper Taco with Mango. Red or Yellow Bell Pepper. Cube the potatoes and cut the Pepper, Onion and Mango. Saute together the potatoes, pepper and onion. VM pulls out his matches and makes a torch for himself and then the others. August 28, 2010. Delicious on a hot summer day, especially in green chile season! This will feed 3-4 people. Multiply as needed. One Large Ripe Mango. One Large Green Chile (or jalapenos). About a teaspoon of finely chopped Cilantro or Parsley. A sharp knife, cutting board, a bowl and a spoon. Also a stove or at least some fire.
