Home made almond milk is a lovely alternative both to diary milk and to the store bought nut milks that often contain weird preservatives and sugars. Be sure to keep the almond pulp - it is perfect in baking! Stay tuned for some Christmas cookies with almond pulp. For this milk, all you need is almonds and water. Soak 1 cup of almonds in water for about 7 hours. Drain the almonds and put them into a blender with 4 cups of fresh water. Blend thoroughly. Put the pulp in an airtight container for later use.

1 (big:) portion for 1 person:. 2 1/2 cups of water. 1/4 cup of buckwheat berries. 1/3 cup of walnuts, coarsely chopped. 1/3 cup of seeds - sunflower, pumpkin or a mix of the two. 1 cup of gluten free rolled oats. I recommend experimenting with the amounts of the different ingredients, and how wet and sticky (i.e. how much water you put in and how long you cook it) you make it. Figure out what works best for you! May i ask do you eat regular porridge too? Has been eating gluten- and dairy free since 2008.
