A Pinch of Salt. Rome’s Hidden Gems: Il Trapizzino di 00100 Pizza. The trapizzino is the ultimate alternative to a sandwich. It’s pizza dough cooked in a square which is then cut on the diagonal, opened up and filled with various fillings. We tried the chicken alla caccitore, which was a beautiful melt-in-your mouth combination of tender chicken in a garlic and olive oil sauce.
