Slicing, seeding and peeling a pumpkin is no small task. I'm not gonna lie. It's a royal pain in the patooty. At one point, as I was covered in sticky, orange strings and nursing a minor knife cut on my finger, I considered throwing in the towel and ordering pizza. I'm so glad I didn't. 4 Tbsp unsalted butter. 1 1/2 c chopped shallots.

Thankful, Grateful, Blessed, the Works. Well, it's the day after Christmas and I am just now getting around to posting pictures from Thanksgiving. This is what happens in December. Pictures and posts are replaced with trees and decorations and I wouldn't have it any other way. So it will take me a few days to get my Christmas reflections in order, but my Thanksgiving thoughts are more than ready. As is tradition, we celebrated Thanksgiving Day at my parents' house. It's 6:50 am on my first day of summer. I should clearly be a. asleep or b. if awake, luxuriating in the idea of not working for the next eight weeks. But the truth is, I woke up with knots in my stomach. I miss my students. I have spent more time with these kids over the past two years. Than with anyone else. There will undoubtedly be a great void in my heart and my life for weeks to come. This group of students is literally the best ever. And so, so helpful. They love to learn. They love my stories.
